Ingredients
Nut-free (coconut flour): A tablespoon of coconut flour does the same job as the almond flour, so the chaffles are nut-free with the same crisp edges and bready center.
- Stir in the coconut flour and let the batter stand 2 minutes before cooking. Coconut flour needs a moment to absorb the egg, and the batter thickens slightly.
Cinnamon roll: Sweetened, cinnamon-swirled chaffles finished with a cream cheese glaze. They taste like a cinnamon roll and take the same 15 minutes as the original.
- Whisk the granulated sweetener and half the cinnamon into the batter. Spoon it into the iron, sprinkle the remaining cinnamon over the top in a thin swirl and close the lid.
- Stir the softened cream cheese with the powdered sweetener, vanilla and 1–2 teaspoons of hot water until smooth and drizzly. Spread over the warm chaffles.
- Watch the color. The sweetener makes these brown faster, so check them a minute early.
Pizza chaffles: Italian-seasoned chaffles topped like mini pizzas with marinara, extra mozzarella and pepperoni, then broiled until bubbling. A favorite for lunchboxes and after-school snacks.
- Stir the Italian seasoning and garlic powder into the batter and cook the chaffles as usual.
- Heat the broiler. Set the chaffles on a foil-lined sheet, spread each with 1 tablespoon of marinara, then add the mozzarella and 2 slices of pepperoni.
- Broil 2–3 minutes, about 4 inches (10 cm) from the heat, until the cheese bubbles and the pepperoni curls at the edges. (An air fryer at 400°F/200°C for 3 minutes works too.)

Instructions
-
Preheat a mini (4-inch/10 cm) waffle maker until the ready light comes on. Grease it lightly if it isn't nonstick.
-
Whisk the eggs in a bowl, then stir in the mozzarella, almond flour and baking powder until everything is evenly coated.
-
Spoon a quarter of the batter (about ⅓ cup) into the center of the iron, spread it toward the edges and close the lid.
-
Cook 3–4 minutes without opening, until the steam has almost stopped and the chaffle is deep golden and releases easily. Opening too early tears it in half.
-
Lift onto a wire rack; chaffles crisp as they cool for a minute or two. Repeat with the remaining batter.
Tips for success
-
For a crackly, extra-crisp crust, sprinkle a tablespoon of shredded cheese onto the hot iron before the batter and another on top.
-
Go sweet with 1 teaspoon erythritol, a pinch of cinnamon and a drop of vanilla, or savory with garlic powder and Italian seasoning.
-
Two chaffles make sturdy sandwich bread. Try a BLT or a scoop of classic egg salad.
Nice to have, not needed
- A mini (4-inch) waffle maker gives the classic shape — in a full-size iron, make 2 larger chaffles and cut them in half.
Storage & meal prepMeal-prep friendly
- Keeps 4 days in the fridge
- Freezes up to 2 months
Reheat: Re-crisp in a toaster, air fryer or the waffle iron for 1–2 minutes; add a minute from frozen.
Prep tip: Cool them on a wire rack, not a plate, so the bottoms stay crisp before you pack them.
Refrigerate up to 4 days or freeze up to 2 months. Re-crisp in a toaster or the waffle iron for 1–2 minutes.
