Instructions

  1. Dice the tomatoes into ¼-inch (6 mm) pieces, discarding the watery seeds, and put them in a bowl.

  2. Add the onion, jalapeño, cilantro, lime juice, salt and garlic (if using); stir gently.

  3. Let stand 15 minutes so the salt draws out the juices and the flavors blend. Taste and add more lime, salt or jalapeño.

  4. Just before serving, use a slotted spoon to leave excess liquid behind.

Tips for success

  • Roma tomatoes are meaty with few seeds, so the salsa stays chunky instead of soupy.
  • For a milder onion bite, soak the diced onion in cold water for 5 minutes and drain well.
  • Pile onto pork rind nachos, fish taco wraps or fajita bowls, or fold into guacamole.

Storage & meal prepMeal-prep friendly

  • Keeps 3 days in the fridge
  • Doesn’t freeze well

Reheat: Serve cold

Prep tip: Drain off the liquid before serving leftovers — it gets juicier every day.

Best the day it’s made. Refrigerate up to 3 days; it softens and releases more liquid over time.
