Ingredients
Sweet & sour sauce: Sugar-free ketchup and tamari replace the chiles for the tangy, red takeout-style dipping sauce. It’s mild enough for kids.
- Leave out the chiles and flakes, whisk the ketchup and tamari into the vinegar mixture and simmer as written. Homemade sugar-free ketchup works perfectly.
Ginger-lime: Fresh ginger simmered in and lime juice stirred in at the end make a zingy dipping sauce for lettuce wraps and grilled fish.
- Simmer the ginger with the garlic and chiles, and stir in the lime juice off the heat after thickening.
-
2 red Fresno chiles or red jalapeñosleave out -

Instructions
-
Combine everything except the xanthan gum in a small saucepan. Bring to a boil, then lower the heat and simmer 5 minutes, until the garlic and chiles soften.
-
Sprinkle the xanthan gum evenly over the surface while whisking hard, then simmer 1–2 minutes more, until glossy and syrupy.
-
Cool completely; it thickens further as it cools and the chile flecks stay suspended. Transfer to a jar.
Tips for success
-
Allulose keeps the sauce clear and pourable when cold. Erythritol turns cloudy and gritty in the fridge.
-
Too thick? Whisk in warm water a teaspoon at a time. Too thin? Simmer a minute longer rather than adding more xanthan, which turns slimy in excess.
-
Serve with crispy coconut shrimp or chicken nuggets, or brush it on baked wings for the last 5 minutes.
Storage & meal prepMeal-prep friendly
- Keeps 7 days in the fridge
- Doesn’t freeze well
Reheat: Serve cold or at room temperature
Prep tip: It keeps up to 3 weeks; pour a little into a small dish for dipping rather than dipping into the jar.
Refrigerate in a sealed jar up to 3 weeks.
