Ingredients
Turkey, bacon & ranch: Deli turkey with a ranch-seasoned cream cheese and crumbled bacon. It’s a little lighter than ham, with lots of flavor.
- Beat the chives and garlic powder into the cream cheese, spread it on the turkey and sprinkle with the bacon before adding the pickle and rolling.
Roast beef & horseradish: Rare roast beef with a sharp horseradish cream cheese is the steakhouse pairing, rolled into a bite.
- Beat the horseradish into the cream cheese (taste and add more if you like it fiery), then spread, roll and chill as written.

Instructions
-
Pat the ham slices and pickles very dry with paper towels. Any moisture keeps the cream cheese from sticking and the rolls will slide apart.
-
Spread about 1 tablespoon of cream cheese in a thin, even layer over each slice of ham, right to the edges. Sprinkle with dill, if using.
-
Lay a pickle along one short edge (trim it to the width of the ham) and roll up tightly.
-
Chill the rolls seam side down for at least 30 minutes so they firm up, then slice each into 5 rounds about ½ inch (1 cm) thick. Spear with toothpicks to serve.
Tips for success
-
Choose dill pickles over bread-and-butter or sweet pickles, which are packed in sugar syrup.
-
Whipped cream cheese spreads easily, or beat a block with a teaspoon of pickle brine to loosen it.
-
Square, sandwich-style ham slices roll more neatly than round ones.
Storage & meal prep
- Keeps 2 days in the fridge
- Doesn’t freeze well
Reheat: Serve cold
Prep tip: Keep the rolls whole and tightly wrapped, and slice only what you need — cut pinwheels dry out and lose their shape.
Refrigerate unsliced rolls, tightly wrapped, up to 2 days. Slice just before serving for the neatest pinwheels.
