Ingredients
Jalapeño hot honey: Fresh jalapeño slices simmered in the syrup in place of chili flakes give a greener, brighter heat. Spoon the candied slices over tacos too.
- Simmer the jalapeño slices in the syrup for 5 minutes, then steep 30 minutes. Strain for a clear syrup, or leave the slices in and use them as candied jalapeños.
Chipotle-lime: Smoky chipotle powder and lime instead of chili flakes and vinegar. Brush it on grilled shrimp, wings or pork chops.
- Whisk the chipotle powder into the syrup as it simmers, then stir in the lime juice and zest off the heat. There’s nothing to strain.

Instructions
-
Combine the allulose and water in a small saucepan over medium heat and stir until the allulose dissolves completely.
-
Add the chili flakes and cayenne and simmer gently, with small bubbles only, for 5–7 minutes, until slightly reduced and syrupy. Keep the heat moderate, because allulose browns faster than sugar.
-
Off the heat, stir in the vinegar and salt. The syrup thickens as it cools to a honey-like consistency.
-
Let it steep at least 30 minutes for more heat. Strain out the flakes for a clear syrup, or leave them in for a hotter, speckled drizzle. Pour into a clean jar.
Tips for success
-
Allulose is the key: it stays pourable and smooth in the fridge, while erythritol recrystallizes into a gritty layer.
-
For a thicker, more honey-like body, whisk in a tiny pinch of xanthan gum at the end of simmering.
-
Drizzle over pepperoni pizza, crispy chicken thighs, roasted Brussels sprouts, goat cheese or “cornbread” muffins.
Storage & meal prepMeal-prep friendly
- Keeps 7 days in the fridge
- Doesn’t freeze well
Reheat: Warm 10 seconds if it has thickened too much to pour.
Prep tip: It keeps up to a month in a sealed jar, so a small batch lasts through plenty of pizza nights.
Refrigerate in a sealed jar up to 1 month. Warm for 10 seconds if it has thickened too much to pour.
