Instructions

  1. Pat the thighs very dry with paper towels. Mix the baking powder, salt, pepper, garlic powder and paprika, then rub it all over the chicken, concentrating on the skin. For the crispiest skin, refrigerate uncovered on a rack for 1 hour or up to overnight.

  2. Heat the oven to 425°F (220°C) with a rack in the upper-middle position. Set a wire rack in a foil-lined sheet pan and arrange the thighs skin-side up so they don’t touch.

  3. Roast 35–45 minutes until the skin is deep golden and crackly and the thickest part reads at least 165°F (74°C) without touching bone. Thighs are even more tender at 175–185°F (79–85°C), so don’t worry about a little extra time.

  4. While the chicken roasts, melt the butter in a small saucepan over low heat. Add the garlic and cook 1–2 minutes until fragrant but not browned. Take it off the heat and stir in the thyme, rosemary, parsley and lemon zest.

  5. Rest the thighs 5 minutes. Spoon the garlic herb butter over the meat and around the plate rather than over the skin, so the skin stays crisp.

  6. Serve with cauliflower mash or garlic green beans to soak up the butter.

Tips for success

  • Use baking powder, not baking soda. It raises the skin’s pH so it blisters and browns. Aluminum-free avoids a metallic aftertaste.
  • The rack lets fat drip away and hot air reach the underside. Save the drippings for roasting vegetables.
  • Boneless skin-on thighs work too. Start checking them at 20–25 minutes.

Nice to have, not needed

  • A wire rack in the sheet pan crisps the skin all over — without one, roast skin-side up on a foil-lined pan and pour off the fat halfway.
  • An instant-read thermometer makes hitting 175°F (79°C) easy; without one, pierce the thickest part near the bone — the juices should run clear.

Storage & meal prepMeal-prep friendly

  • Keeps 4 days in the fridge
  • Freezes up to 3 months

Reheat: Re-crisp at 400°F (200°C) in the oven or air fryer for 6–8 minutes; warm the herb butter separately.

Prep tip: Keep the garlic herb butter in its own small jar — it firms up in the fridge and melts back over the hot chicken.

Refrigerate up to 4 days. Re-crisp the skin in a 400°F (200°C) oven or air fryer for 6–8 minutes.

Variations

3 variations, each with its own ingredients and macros

Dairy-free (herb oil)

Diet

A bright garlic, herb and lemon olive oil replaces the butter. It is spooned over the meat the same way and keeps the skin just as crisp.
