Ingredients
Dairy-free: Coconut oil replaces the butter in the batter and on the iron, so the waffles are completely dairy-free and just as crisp.
- Have the yolks and almond milk at room temperature so the melted coconut oil doesn’t firm up into flecks when you whisk it in.
Double chocolate: Cocoa in the batter and pockets of melted sugar-free chocolate make a brownie-like waffle for weekends and birthdays.
- Whisk the cocoa and extra sweetener in with the dry ingredients. The batter is stiffer, so fold the whites in patiently.
- Sprinkle a few chocolate chips over the batter in the iron before closing the lid. You can't judge doneness by color here, so go by the steam: lift the lid when it has almost stopped.
Savory cheddar & chive: No sweetener or vanilla. Sharp cheddar and chives go into the batter instead, for waffles that belong under fried chicken, a fried egg or pulled pork.
- Fold the cheddar and chives into the batter along with the last of the egg whites. The cheese crisps against the iron, so grease it well.
- Serve with keto chicken nuggets and hot sauce for chicken and waffles, or top with a fried egg.

Instructions
-
Heat a waffle iron to medium-high. Set a wire rack on a baking sheet in the oven and heat it to 200°F (95°C) to keep finished waffles crisp.
-
Whisk the almond flour, coconut flour, sweetener, baking powder and salt in a large bowl.
-
In a second bowl, whisk the egg yolks, almond milk, melted butter and vanilla. Stir into the dry ingredients until smooth; the batter will be thick.
-
Beat the egg whites with a clean whisk or hand mixer until they hold stiff peaks, about 2 minutes. Stir a third of them into the batter to loosen it, then gently fold in the rest until no large streaks of white remain.
-
Brush the iron with butter. Spoon in about ¾ cup of batter, spread it toward the edges and close the lid. Cook 4–5 minutes, until the steam has almost stopped and the waffle is deep golden and releases easily.
-
Move each waffle to the rack in the oven while you cook the rest. Serve with butter and berries or sugar-free “maple” syrup.
Tips for success
-
The whipped whites are what make these crisp and light. Batter made with whole eggs works, but the waffles turn out denser and softer.
-
Almond flour browns fast. If the outside darkens before the steam stops, turn the iron down a notch.
-
Want a waffle that doubles as sandwich bread? Try classic chaffles, made with cheese.
Nice to have, not needed
- A hand mixer whips the egg whites in about 2 minutes — a balloon whisk takes a little longer but works just as well.
Storage & meal prepMeal-prep friendly

Reheat: Toast straight from the fridge or freezer, or warm at 375°F (190°C) for 5–6 minutes.
Prep tip: Freeze in a single layer on a tray before bagging so they don't stick together.
Cool on a rack, then freeze in a single layer before bagging; they keep 3 months. Reheat straight from frozen in a toaster or a 375°F (190°C) oven for 5–6 minutes.
