Ingredients
Peanut butter center: A spoonful of peanut butter hidden in each cake melts into a gooey peanut butter core.
- Fill each ramekin halfway, drop in ½ tablespoon of cold peanut butter and cover with the remaining batter. Bake as usual.
Raspberry: Fresh raspberries tucked into the center add bright, tart pockets to the rich chocolate.
- Fill each ramekin halfway, press in 3–4 raspberries and cover with the rest of the batter. Serve the remaining berries on the side.
Dairy-free: Coconut oil replaces the butter, with no change in that molten middle.
- Melt the coconut oil with the chocolate and grease the ramekins with it. Use sugar-free chocolate chips labeled dairy-free.

Instructions
-
Heat the oven to 425°F (220°C). Butter four 6-oz (180 ml) ramekins well, dust them with the cocoa, tap out the excess and set them on a baking sheet.
-
Melt the chopped chocolate, chocolate chips and butter together in the microwave in 20-second bursts (or over barely simmering water), stirring until smooth. Cool for 5 minutes.
-
Whisk the eggs, egg yolks, powdered erythritol, vanilla and salt for about 2 minutes, until thick and pale.
-
Fold the chocolate into the eggs, then fold in the almond flour until no streaks remain. Divide among the ramekins.
-
Bake 9–11 minutes, until the sides are set and slightly pulling away but the center still looks soft and jiggles when you shake the pan.
-
Rest 1 minute, run a thin knife around the edges, put a plate on top of each ramekin and invert. Serve immediately, with whipped cream or berries.
Tips for success
-
Ovens vary, so bake one test cake first: if the center is set, shave a minute off; if it collapses when unmolded, add one.
-
The molten center is undercooked egg. If you are serving young children, pregnant guests, older adults or anyone with a weakened immune system, use pasteurized eggs or bake 2–3 minutes longer for a fudgy, fully set center.
-
Make ahead: fill the ramekins, cover and refrigerate up to 1 day. Bake straight from the fridge, adding 2–3 minutes.
Nice to have, not needed
- A dollop of whipped cream and a few fresh raspberries are the classic finish.
Storage & meal prep
- Keeps 2 days in the fridge
- Doesn’t freeze well
Reheat: Warm leftovers 15 seconds in the microwave — they turn into fudgy cakes rather than molten ones.
Prep tip: Fill the ramekins up to a day ahead, cover and refrigerate; bake straight from the fridge, adding 2–3 minutes.
Best eaten straight from the oven. Leftovers firm up into fudgy cakes; refrigerate up to 2 days and warm for 15 seconds in the microwave.
