Instructions

  1. Cut a 2½-inch (6 cm) hole from the center of each slice with a round cutter or the rim of a small glass. Keep the rounds.

  2. Spread both sides of the slices and the rounds thinly with about half the butter.

  3. Heat a large nonstick or cast-iron skillet over medium-low heat. Lay in the bread and rounds and toast 1–2 minutes, until golden underneath, then flip everything over.

  4. Drop a small piece of the remaining butter into each hole and crack an egg into it. Season with salt and pepper.

  5. Cover the pan and cook 3–4 minutes, until the whites are completely set and opaque and the yolks are done to your liking. For over-medium, flip carefully with a wide spatula and cook 30–60 seconds more.

  6. Serve with the toasted rounds for dipping, sprinkled with chives.

Tips for success

  • Keep the heat at medium-low. Keto bread browns faster than wheat bread, and the lid lets the whites set before the toast scorches.
  • Crack each egg into a small cup first so you can pour it neatly into the hole. If the white runs under the bread, press the slice down lightly with the spatula to seal it.
  • Store-bought keto breads vary in carbs, and many contain wheat gluten. A slice of homemade almond flour sandwich bread works just as well.

Nice to have, not needed

  • A 2½-inch (6 cm) biscuit cutter makes a neat hole — the rim of a small glass works too.
