Instructions

  1. Heat the oven to 400°F (200°C). Scoop out the center of each zucchini half with a spoon, leaving a shell about ¼ inch (6 mm) thick. Finely chop the scooped flesh and set it aside.

  2. Brush the shells with the oil, sprinkle with the salt and set them cut-side up in a baking dish. Bake 10 minutes to soften, then pour off any liquid that has collected.

  3. Meanwhile, brown the sausage in a large skillet over medium-high heat, breaking it up, until no pink remains (160°F/71°C), 6–8 minutes. Spoon off the fat.

  4. Add the garlic and chopped zucchini flesh and cook 3–4 minutes, until the moisture has evaporated. Stir in the tomatoes and Italian seasoning and simmer 3 minutes, until thick. Off the heat, stir in the parmesan and half the mozzarella.

  5. Mound the filling into the shells and top with the remaining mozzarella. Bake 15–20 minutes, until the cheese is bubbling and the zucchini is tender when pierced. Broil 1–2 minutes for a browned top.

  6. Rest 5 minutes, then scatter with basil and serve.

Tips for success

  • Choose straight, evenly thick zucchini so the boats sit flat and cook at the same rate.
  • Pre-baking the shells and cooking the scooped flesh dry are what keep the boats from turning watery.
  • Sausage brands differ a lot in carbs; look for about 3 g or less per link. A side of no-sugar marinara for dipping is a nice extra.

Nice to have, not needed

  • A melon baller or grapefruit spoon scoops the zucchini neatly — a teaspoon works too.

Storage & meal prepMeal-prep friendly

  • Keeps 3 days in the fridge
  • Doesn’t freeze well

Reheat: Reheat at 350°F (175°C) for 12–15 minutes, or microwave 1½–2 minutes (the zucchini softens a little).

Prep tip: Make the filling up to 2 days ahead; scoop, fill and bake the zucchini on the day so the shells stay firm.

Refrigerate up to 3 days. Reheat at 350°F (175°C) for 12–15 minutes.
