Ingredients
Prosciutto-wrapped: Paper-thin prosciutto crisps in a hot oven in about 10 minutes, giving a more delicate, salty wrap than bacon.
- Wrap each bundle in a slice of prosciutto and set on a parchment-lined sheet pan (no rack needed).
- Roast at 425°F (220°C) for 10–12 minutes, until the prosciutto is crisp at the edges and the spears are crisp-tender.
Green bean bundles: The holiday classic: bacon-wrapped bundles of green beans, briefly blanched first so they turn tender as the bacon crisps.
- Blanch the beans in boiling salted water for 2 minutes, plunge into ice water, then drain and dry well.
- Bundle 8–10 beans per slice of bacon and roast on the rack as written, 20–25 minutes, until the bacon is crisp.

Instructions
-
Heat the oven to 400°F (200°C). Set a wire rack on a foil-lined sheet pan.
-
Pat the asparagus dry and toss with the oil, garlic powder and pepper (the bacon brings plenty of salt). Divide into 6 bundles of 3–5 spears.
-
Wrap a slice of bacon around the middle of each bundle in a spiral, stretching it slightly as you go. Set the bundles seam side down on the rack.
-
Roast 20–25 minutes, until the bacon is crisp and the thick ends of the spears are tender when pierced with a knife. Grate lemon zest over the top, if using, and serve warm.
Tips for success
-
Medium-thick spears are ideal; pencil-thin asparagus overcooks before the bacon renders.
-
Using thick-cut bacon? Par-bake it on the rack for 5 minutes before wrapping.
-
Serve with a little hollandaise for dipping, or alongside garlic butter steak bites instead of fries.
Nice to have, not needed
- A wire rack lets the bacon crisp all around — without one, roast on parchment and turn the bundles halfway.
- A spoonful of hollandaise for dipping is a nice upgrade.
Storage & meal prepMeal-prep friendly
- Keeps 3 days in the fridge
- Doesn’t freeze well
Reheat: Re-crisp at 400°F (200°C) or in an air fryer for about 5 minutes.
Prep tip: Wrap the bundles up to a day ahead and keep them covered in the fridge, then roast when you need them.
Best fresh. Refrigerate leftovers up to 3 days and re-crisp in a 400°F (200°C) oven or air fryer for about 5 minutes.
