Keto Irish Coffee
Hot, strong coffee sweetened with allulose and spiked with Irish whiskey, under a cool, thick layer of lightly whipped cream. You sip the hot coffee through the cold cream, just like the Dublin original, with about 1 g net carbs.

Ingredients
Irish mocha: A spoonful of cocoa and a little extra sweetener dissolved into the coffee make a chocolatey Irish coffee for cold evenings.
- Whisk the cocoa and extra sweetener into a splash of the hot coffee to make a smooth paste, then stir in the rest of the coffee and the whiskey before floating the cream.
Dairy-free (coconut cream): Loosely whisked coconut cream floats just like dairy cream and adds a faint tropical note.
- Whisk the chilled coconut cream briefly until smooth and loose, then float it over the back of a spoon as directed.

Instructions
-
Fill a heatproof glass or mug with hot water to warm it while you get everything ready.
-
Whisk or shake the cold cream in a small jar for 20–30 seconds, just until it thickens to the texture of melted ice cream. It should still pour in a slow ribbon rather than hold peaks.
-
Empty the glass and add the hot coffee and allulose. Stir until the sweetener dissolves completely, then stir in the whiskey.
-
Hold a spoon upside down just above the coffee and slowly pour the cream over the back of it so it floats in a thick layer on top. Don't stir; drink the coffee through the cream. Grate a little nutmeg over the top if you like.
Tips for success
-
The sweetener does more than sweeten. Dissolved allulose makes the coffee slightly denser, which helps the cream float, so don't skip it.
-
Under-whip the cream. Stiff cream sits on top in a lump; loosely whipped cream settles into a smooth, even collar.
-
Alcohol can hit harder and faster on keto, so pace yourself. For a cozy mug without the whiskey, try a butter coffee.
Nice to have, not needed
- A stemmed, heatproof Irish coffee glass shows off the layers — any heatproof mug works.
- A grating of nutmeg over the cream is a nice finish — not needed.
