Instructions

  1. Brew the coffee a little stronger than usual; the added fat mellows it, so a bolder brew tastes balanced.

  2. Fill your mug with hot water to warm it while you blend.

  3. Put the hot coffee, butter and MCT oil in a blender. Remove the center cap from the lid, cover the opening with a folded towel and blend 20–30 seconds, until pale and creamy with a thick layer of foam.

  4. Empty the mug, pour in the coffee and dust with cinnamon if you like. Drink right away while the foam is thick.

Tips for success

  • Blending, not stirring, is what makes it work. It emulsifies the fat into a smooth, latte-like drink instead of leaving an oil slick on top. A handheld milk frother also works for a single mug.
  • MCT oil can upset some stomachs in larger amounts. Start with 1 teaspoon and work up to a tablespoon over a week or two.
  • Prefer something sweet and iced? Try a sweet cream cold brew instead; butter firms up in cold coffee.

Nice to have, not needed

  • A handheld milk frother works for a single mug — a blender gives the thickest foam.

Storage & meal prep

  • Best eaten fresh

Reheat: Best made fresh; if it separates, rewarm and blend again.

Best made fresh. The fat separates as it cools, so re-blend if needed.
