Ingredients
Turkey, Swiss & ranch: Rolled deli turkey and Swiss with celery sticks and a little cup of ranch for dipping. It’s a milder box that kids like too.
- Roll each turkey slice around a strip of Swiss, and pack the ranch in small lidded cups next to the celery.
Greek-style (feta & Kalamata): Feta cubes, Kalamata olives and a sprinkle of oregano give the box a Mediterranean feel that suits the cucumber.
- Toss the feta cubes with the olive oil and oregano before packing, and keep them in their own compartment so the oil doesn’t soak into the almonds.
Vegetarian: No salami: an extra hard-boiled egg in every box keeps the protein up.
- Boil 8 eggs instead of 4 and pack two in each box.

Instructions
-
Lay the eggs in a saucepan, cover with cold water by 1 inch (2.5 cm) and bring to a full boil. Cover, take the pan off the heat and let stand 12 minutes, then move the eggs to a bowl of ice water for 5 minutes. Peel them, or leave them in their shells for packing.
-
While the eggs cook, cube the cheese, slice the cucumber and drain the olives well on paper towels. Fold or roll the salami slices.
-
Divide everything among four containers, ideally ones with compartments. Keep the cucumber and olives in their own section or a silicone cup so the almonds stay crunchy.
-
Close the lids and refrigerate. Grab a box on your way out the door.
Tips for success
-
Rotate the line-up from week to week: deviled eggs, pimento cheese with celery or pickle roll-ups all pack well.
-
Leaving the eggs in their shells keeps them moist; peel them when you eat.
-
Cheese cubes cut from a block cost much less than individually wrapped snack portions.
Nice to have, not needed
- Bento-style containers with compartments keep everything neat — small silicone cups or snack bags inside any container work too.
- A few cherry tomatoes or a spoonful of ranch for the cucumber are nice extras that add about 1 g net carbs.
Storage & meal prepMeal-prep friendly
- Keeps 4 days in the fridge
- Doesn’t freeze well
Reheat: Serve cold
Prep tip: Assemble all four boxes on prep day to cover Monday to Thursday, keeping wet and dry foods in separate compartments.
Refrigerate the assembled boxes up to 4 days. Unpeeled hard-boiled eggs keep up to a week on their own.
