Ingredients
Chocolate milkshake: Cocoa replaces the strawberries for a classic diner chocolate shake, and extra ice keeps it thick and frosty.
- Blend the cocoa and extra sweetener with the almond milk and cream for a few seconds first so the cocoa dissolves, then add all the ice and blend until thick.
Dairy-free (coconut cream): Rich coconut cream replaces the heavy cream. The shake stays thick and creamy, with a soft tropical note alongside the strawberry.
- Warm the can of coconut cream slightly and stir until smooth before measuring, or it will leave waxy flecks in the cold shake.

Instructions
-
Add the almond milk, cream, sweetener, vanilla and xanthan gum to a blender, then the frozen strawberries and ice.
-
Blend on high 45–60 seconds, until thick, smooth and pale pink, stopping once to push the strawberries down if needed.
-
Taste, add more sweetener if your berries are tart, and blend 5 seconds more.
-
Pour into chilled glasses. Top with a swirl of whipped cream and the sliced strawberry, if you like.
Tips for success
-
The pinch of xanthan gum is the soda-fountain secret. It gives the shake body and keeps it from separating, but more than a pinch makes it gummy.
-
Freeze sliced strawberries flat on a tray so they blend smoothly; whole frozen berries can jam the blades.
-
For an extra-thick, spoonable shake, blend in a scoop of no-churn vanilla ice cream, and count its carbs too.
Nice to have, not needed
- Whipped cream and a fresh strawberry on top are the soda-fountain finish — it is thick and pretty without them.
Storage & meal prep
- Best eaten fresh
Reheat: Best enjoyed immediately; freeze any leftovers as ice pops.
