Instructions

  1. Heat the oven to 350°F (175°C) and butter a 9-inch (23 cm) round cake pan or cast-iron skillet. Whisk the almond flour and baking powder together.

  2. Melt the mozzarella and cream cheese in a large microwave-safe bowl: 1 minute, stir, then 20–30 second bursts until completely smooth.

  3. Add the almond flour mixture and the eggs. Stir with a sturdy spatula, then knead with oiled hands until smooth. The dough will be soft; if it is too sticky to shape, chill it 10–15 minutes.

  4. Divide into 10 equal pieces (about 55 g each). With oiled hands, roll each into a smooth ball and arrange them in the pan so they just touch.

  5. Bake 20–25 minutes, until puffed, deep golden-brown and hollow-sounding when tapped. If the tops brown too quickly, lay a sheet of foil loosely over the pan for the last 5–10 minutes.

  6. Warm the butter with the garlic for 1 minute, then brush it over the hot rolls and sprinkle with parsley and flaky salt. Cool 5–10 minutes before pulling apart.

Tips for success

  • Underbaked mozzarella dough is gummy in the center, so go for a deep golden color rather than pale.
  • Make ahead: bake, cool and freeze the rolls, then warm them at 350°F (175°C) for 8–10 minutes and brush with fresh garlic butter.
  • Serve with roast chicken and pan gravy, or with a bowl of zuppa Toscana.

Nice to have, not needed

  • A kitchen scale makes evenly sized rolls (about 55 g each) — eyeballing ten pieces works fine.
