Ingredients
Dairy-free: A lemon, garlic and herb olive oil paste goes under the skin instead of butter. The skin still roasts up golden and crisp.
- Stir the garlic, zest and herbs into the olive oil to make a loose paste. Spoon most of it under the loosened skin and massage it around from the outside, then rub the rest over the top.
Peruvian-style with green sauce: Inspired by pollo a la brasa: a cumin, paprika, lime and garlic rub, served with a spicy cilantro-jalapeño sauce for dipping.
- Stir the oil, garlic, cumin, paprika, oregano, 2 tbsp lime juice and tamari into a paste. Rub it under and over the skin and refrigerate uncovered 1–24 hours. Leave the cavity empty.
- Roast exactly as written, to 165°F (74°C) in the thickest part of the thigh.
- For the green sauce, blend the mayonnaise, cilantro, jalapeño, 1 tbsp lime juice and a pinch of salt until smooth. Serve it alongside for dipping.
One-pan with radishes & fennel: Radishes and fennel roast under the bird in its drippings, so the side dish cooks itself. The radishes turn mellow and potato-like.
- Roast the chicken in a large roasting pan or 12-inch (30 cm) skillet. After 30 minutes, toss the radishes and fennel with the olive oil and a pinch of salt and scatter them around the bird.
- Stir the vegetables into the pan juices when you baste. They are done when tender and browned at the edges, about the same time the chicken reaches 165°F (74°C).

Instructions
-
At least 1 hour and up to 24 hours ahead, pat the chicken very dry inside and out. Season all over with the salt and pepper and refrigerate uncovered on a plate. The dry surface is what makes the skin crackle.
-
Heat the oven to 425°F (220°C). Mash the softened butter with the minced garlic, the lemon zest, thyme and rosemary.
-
Gently loosen the skin over the breast and thighs with your fingers. Push about two-thirds of the butter under the skin and smear the rest over the outside. Tuck the lemon halves and halved garlic head into the cavity, tie the legs together and tuck the wing tips under.
-
Set the chicken breast-side up in a cast-iron skillet or small roasting pan. Roast 60–75 minutes (about 15 minutes per lb), basting once with the pan juices after 40 minutes. It’s done when the skin is deep golden, the juices run clear and the thickest part of the thigh, not touching bone, reads 165°F (74°C).
-
Rest 15 minutes, loosely tented with foil, so the juices settle back into the meat.
-
Carve, squeeze the roasted lemon over the meat and spoon over the pan juices. Use the drippings to make keto pan gravy if you like.
Tips for success
-
Short on time? Spatchcock the bird by cutting out the backbone and pressing it flat. It roasts in 40–45 minutes at the same temperature.
-
Surround the chicken with halved radishes for the last 40 minutes. They soak up the drippings and turn sweet and tender, like our roasted radishes.
-
Use leftovers for chicken salad lettuce wraps or chicken zoodle soup, and simmer the carcass for broth.
Nice to have, not needed
- An instant-read thermometer is the surest way to know the bird is done; without one, pierce the thigh — the juices should run clear, not pink.
- Kitchen twine keeps the legs neat — skip it and the bird cooks just as well.
Storage & meal prepMeal-prep friendly
- Keeps 4 days in the fridge
- Freezes up to 3 months
Reheat: Warm covered at 325°F (165°C) with a spoonful of pan juices for 10–15 minutes, or eat cold in salads and wraps.
Prep tip: Pull the meat off the bones while it’s still warm — it’s much easier — and freeze the carcass for broth.
Refrigerate carved meat up to 4 days or freeze up to 3 months.
