Ingredients
Vegetarian mushroom gravy: Deeply browned mushrooms and vegetable broth replace the meat drippings. The result is rich enough for a holiday table with vegetarian guests.
- Melt the butter in a skillet over medium-high heat and add the mushrooms. Leave them undisturbed for 3 minutes, then stir and cook 4–5 minutes more, until deep golden.
- Add the broth, tamari, onion powder and thyme (skip the Worcestershire, which contains anchovies) and continue as written.
Sausage gravy: Southern-style white sausage gravy made with cream and lots of black pepper. Spoon it over keto biscuits for breakfast.
- Brown the sausage in a skillet over medium heat, breaking it into small crumbles, until no pink remains (160°F/71°C), 7–8 minutes. Leave the fat in the pan; it replaces the butter.
- Pour in the cream and water, add the onion powder and sage and bring to a gentle simmer. Sprinkle in the xanthan gum while stirring and simmer 2 minutes until thick. Stir in the remaining 2 tbsp cream, season generously with pepper and serve over cheddar biscuits.

Instructions
-
After roasting, pour the pan drippings into a heatproof cup and spoon 2 tbsp of the fat back into the roasting pan (or melt butter in a skillet). Set over medium heat.
-
Pour in the broth and scrape up the browned bits with a wooden spoon. Add the Worcestershire, onion powder, thyme and any defatted pan juices, then simmer 5 minutes to concentrate the flavor.
-
Sprinkle the xanthan gum over the surface a little at a time while whisking vigorously. Simmer 1–2 minutes; it will thicken noticeably. Add another pinch only if it’s still too thin.
-
Stir in the cream, season with salt and pepper and simmer 1 minute more. Strain if you want it extra smooth.
Tips for success
-
Xanthan clumps if it lands in one spot. Sprinkling slowly while whisking — or buzzing the gravy briefly with an immersion blender — guarantees a smooth result.
-
Gravy keeps thickening as it cools, so stop when it’s slightly thinner than you’d like.
-
Pour over cauliflower mash, roast chicken, meatloaf or pork chops.
Storage & meal prepMeal-prep friendly
- Keeps 4 days in the fridge
- Freezes up to 3 months
Reheat: Warm gently on the stove, whisking in a splash of broth to loosen.
Prep tip: Freeze it in small portions; gravy thickened with xanthan holds together after thawing better than flour gravy does.
Refrigerate up to 4 days or freeze up to 3 months. Reheat gently, whisking in a splash of broth to loosen.
