Ingredients
Strawberry mojito: A few ripe strawberries muddled with the mint and lime make it fruity and blush-pink, with about 5 g net carbs.
- Muddle the strawberries firmly with the sweetener and lime juice first, until they are completely crushed, then add the mint and press gently. Strawberries need more force than mint does.
Cucumber mojito: Muddled cucumber makes the mojito extra cool and garden-fresh. It is lighter and less sweet-tasting than the classic.
- Muddle the cucumber with the sweetener and lime juice until juicy, then add the mint and press gently. Strain the drink over fresh ice if you prefer it without pulp.

Instructions
-
Put the mint leaves, sweetener and lime juice in a sturdy highball glass. Press gently with a muddler or the handle of a wooden spoon 5 or 6 times, just enough to bruise the leaves and release their aroma without shredding them.
-
Add the rum and stir until the sweetener dissolves.
-
Fill the glass with crushed or cracked ice, then top with the club soda.
-
Stir once from the bottom to lift the mint up through the ice. Garnish with a mint sprig and a lime wheel.
Tips for success
-
Muddle gently. Pulverized mint turns bitter and leaves green flecks floating in the drink.
-
For a party, make keto simple syrup ahead: warm equal parts allulose and water until dissolved, cool, and use 1 tablespoon per drink.
-
Alcohol often hits harder on keto, so pace yourself. For a virgin version, skip the rum and add an extra 2 oz of club soda.
Nice to have, not needed
- A muddler bruises the mint evenly — the handle of a wooden spoon works just as well.
Storage & meal prep
