Instructions

  1. Make the ginger syrup: simmer the grated ginger, allulose and water in a small saucepan for 2–3 minutes, until the sweetener dissolves. Take it off the heat, steep 5 minutes, then press through a fine sieve, squeezing the pulp to get every drop. Let it cool; an ice cube speeds this up.

  2. Fill a copper mug or highball glass with crushed ice.

  3. Add the vodka, lime juice and ginger syrup and stir briefly.

  4. Top with the club soda, give it one gentle stir from the bottom and garnish with a lime wedge and mint.

Tips for success

  • The ginger syrup does the job of ginger beer here. Make a batch (½ cup grated ginger, ½ cup allulose, 1 cup water) and keep it in the fridge up to 2 weeks for instant mules or homemade ginger ale.
  • A copper mug keeps the drink icy cold, but any glass works.
  • Store-bought diet ginger beer works in a pinch. Check the label for maltitol, which raises blood sugar much more than other sugar alcohols.
