Ingredients
Feta & tomato: Roasted with cherry tomatoes until they burst, then finished with crumbled feta and oregano, Greek-style.
- Toss the tomatoes and oregano with the asparagus and roast them together; the tomatoes should blister and start to burst.
- Instead of the parmesan, crumble the feta over the hot spears straight out of the oven, then add the lemon.
Dairy-free sesame-ginger: Tamari, fresh ginger, toasted sesame oil and sesame seeds instead of parmesan — a dairy-free side for salmon or stir-fries.
- Roast the spears with the avocado oil, garlic, salt and pepper.
- While they are hot, toss with the tamari, ginger, sesame oil and lemon juice and scatter with the sesame seeds.

Instructions
-
Heat the oven to 425°F (220°C).
-
Bend one spear near its base until it snaps — that is where the woody part ends. Line up the rest and cut them at the same point. If the spears are thicker than your thumb, peel the bottom 2 inches (5 cm).
-
On a rimmed sheet pan, toss the asparagus with the oil, garlic, salt and pepper and spread it in a single layer.
-
Roast until bright green and tender-crisp: 8–10 minutes for thin spears, 10–12 for medium, 12–15 for thick. A knife should pierce the thickest part with slight resistance.
-
Scatter the parmesan and lemon zest over the spears and roast 2–3 minutes more, until the cheese melts. Drizzle with the lemon juice just before serving.
Tips for success
-
Buy spears of similar thickness so they finish at the same time — pencil-thin asparagus cooks in about half the time of jumbo spears.
-
Add the lemon juice at the table; acid turns green vegetables olive-drab if it sits on them in the oven.
-
Serve with garlic butter salmon, or spoon hollandaise over the top for brunch.
Nice to have, not needed
- A spoonful of hollandaise turns it into a brunch side — it is just as good plain.
