Caramel Flan
A silky, wobbly baked custard that unmolds into a pool of golden caramel sauce. Allulose caramelizes like sugar, and cream stands in for the sweetened condensed milk.

Ingredients
Cream cheese (flan de queso): Cream cheese blended into the custard in place of the almond milk makes the dense, velvety, cheesecake-like flan de queso.
- Blend the softened cream cheese with the eggs, yolks, allulose and salt on low speed until completely smooth, then blend in the cream and vanilla. Leave out the almond milk.
- Bake 55–70 minutes, until the center has only a slight wobble.
Coconut (dairy-free): A can of coconut milk replaces the cream for a dairy-free flan with a gentle tropical flavor, popular across the Caribbean.
- Whisk the coconut milk until smooth before adding it to the eggs. Coconut custard is a little softer, so bake until the center barely wobbles and chill at least 8 hours before unmolding.
Café (espresso): Strong espresso whisked into the custard gives a coffee flan with a bittersweet edge against the caramel.
- Whisk the cooled espresso in with the cream. Bake 55–65 minutes, as the extra liquid takes a little longer to set.

Instructions
-
Heat the oven to 325°F (165°C) and bring a kettle of water to a boil. Have ready an 8-inch (20 cm) round cake pan (not a springform) and a roasting pan it fits in.
-
For the caramel, put the ½ cup allulose and water in a small, light-colored saucepan over medium heat. Swirl the pan (do not stir) as it melts and bubbles, and cook 4–7 minutes until it turns a deep amber, like maple syrup. Allulose goes from amber to burnt in seconds, so pull it off the heat as soon as it colors.
-
Immediately pour the caramel into the cake pan and tilt to coat the bottom. It thickens but stays a little soft — that is fine.
-
In a large bowl, gently whisk the eggs, egg yolks, ⅓ cup allulose and salt until smooth, without whipping in air. Whisk in the cream, almond milk and vanilla.
-
Pour the custard through a fine sieve over the caramel and skim off any bubbles. Set the cake pan in the roasting pan, slide it into the oven and pour boiling water into the roasting pan to come halfway up the sides of the cake pan.
-
Bake 50–60 minutes, until the edges are set and a 2-inch (5 cm) circle in the center still jiggles like gelatin when you nudge the pan; a knife inserted 1 inch from the center should come out clean (about 170–175°F/77–80°C in the middle).
-
Lift the pan out of the water, cool on a rack for 1 hour, then cover and refrigerate at least 6 hours, ideally overnight.
-
To serve, run a thin knife around the edge, set a rimmed serving plate on top and flip in one quick motion. Lift off the pan and let the caramel sauce run over the flan. Cut into 8 wedges and spoon the sauce over each.
Tips for success
-
Allulose is the only common keto sweetener that caramelizes like sugar. Erythritol melts but will not brown, and it recrystallizes into a hard layer. Allulose caramel stays softer and saucier than sugar caramel, which suits flan perfectly.
-
Whisk gently and strain: air bubbles bake into holes, and the sieve catches any stringy bits of egg for a glass-smooth custard.
-
Overbaked flan turns spongy and weeps. Pull it while the center still wobbles — it finishes setting in the fridge.
Nice to have, not needed
- A blender on low speed makes the smoothest custard in seconds — a whisk works fine.
- A rimmed serving plate catches all the caramel sauce when you flip the flan.
Storage & meal prepMeal-prep friendly
- Keeps 4 days in the fridge
- Doesn’t freeze well
Reheat: Serve cold, with the caramel sauce spooned over each slice.
Prep tip: Keep the flan in its pan, covered, until the day you serve it; it unmolds most cleanly when thoroughly chilled.
Refrigerate, covered, up to 4 days. Do not freeze — the custard weeps and turns grainy when thawed.
