Instructions

  1. For the "condensed milk", combine the cream, allulose and 1 tablespoon butter in a wide, heavy saucepan. Bring to a simmer over medium heat, then lower the heat and simmer gently for 20–25 minutes, stirring every few minutes, until reduced by about half, pale golden and thick enough to coat the back of a spoon. Stir in the vanilla and let it cool for 10 minutes; it thickens more as it cools.

  2. Meanwhile, heat the oven to 350°F (175°C) and line an 8-inch (20 cm) square pan with parchment, leaving an overhang on two sides.

  3. Stir the almond flour, erythritol, cinnamon, salt and melted butter together until it looks like damp sand. Press it firmly into the pan and bake 10–12 minutes, until golden at the edges.

  4. Scatter the chocolate chips over the warm crust, then the coconut, then the pecans. Drizzle the "condensed milk" evenly over the top so it seeps down through the layers.

  5. Bake 20–25 minutes, until the edges are bubbling and the coconut is toasted golden.

  6. Cool completely in the pan, then refrigerate at least 2 hours, until firm. Lift out by the parchment and cut into 16 bars with a sharp knife.

Tips for success

  • A light-colored, heavy saucepan lets you see the "condensed milk" color. Allulose browns as it reduces, which gives a lovely dulce-de-leche note — but turn the heat down if it darkens before it thickens.
  • The bars are gooey at room temperature and chewy from the fridge; cut them cold for clean edges.
  • The classic graham-cracker crust and butterscotch chips are both sugar-heavy, so this version leans on a cinnamon almond crust and extra chocolate instead.

Nice to have, not needed

  • A wide, light-colored saucepan reduces the cream faster and lets you watch its color — any heavy pan works with a little more patience.

Storage & meal prepMeal-prep friendly

  • Keeps 7 days in the fridge

Reheat: Serve cold from the fridge for chewy bars, or at room temperature for gooey ones.

Prep tip: Cut the whole pan before storing and layer the bars with parchment so you can take out one at a time.

Refrigerate in an airtight container up to 1 week, or freeze up to 3 months.
