Ingredients
Kielbasa & cabbage: Smoked kielbasa roasted with cabbage wedges, pepper and onion and seasoned with smoked paprika, served with grainy mustard — a Polish-style sheet-pan supper.
- Toss the cabbage wedges, green pepper, onion and garlic with the oil, smoked paprika, pepper flakes, salt and pepper and roast 15 minutes on their own.
- Add the kielbasa and roast 12–15 minutes more. It is already cooked, so it only needs to brown and heat through to 165°F (74°C). Serve with the mustard.
Chicken thighs & peppers: Boneless chicken thighs roasted with the same peppers, onion and garlic: a leaner pan that keeps the Italian flavors.
- Season the chicken with the paprika and extra salt and toss it right on the pan with the vegetables. Roast 25–30 minutes, stirring halfway, until the chicken is browned and 165°F (74°C) in the thickest piece.

Instructions
-
Heat the oven to 425°F (220°C) and line a large rimmed sheet pan with parchment or foil.
-
Toss the peppers, onion and garlic with the olive oil, Italian seasoning, pepper flakes, salt and pepper right on the pan, then spread into an even layer.
-
Prick each sausage a few times with a fork and nestle them among the vegetables, leaving a little room around everything — crowded vegetables steam instead of roast.
-
Roast 15 minutes, then turn the sausages and stir the vegetables.
-
Roast 12–15 minutes more, until the sausages are browned and read 160°F (71°C) in the center and the peppers are soft and charred at the edges. Broil 2 minutes for extra color if you like.
-
Slice the sausages on the diagonal if you prefer, toss everything with the pan juices, and finish with parmesan and parsley.
Tips for success
-
Sausage recipes vary a lot: some brands add sugar, corn syrup or breadcrumbs. Look for about 3 g of carbs or less per link.
-
One red and one green pepper gives the classic look. Red peppers are sweeter and slightly higher in carbs, but an all-red pan adds only about 0.3 g net carbs per serving.
-
Serve over buttery cabbage noodles or pile into a keto bun for a sausage-and-pepper sandwich.
Nice to have, not needed
- A spoonful of grainy mustard or a few pickled hot peppers on the side adds tang — nice, but not needed.
Storage & meal prepMeal-prep friendly
- Keeps 4 days in the fridge
- Freezes up to 2 months
Reheat: Spread on a sheet pan and reheat at 400°F (200°C) for 8–10 minutes, or microwave 1½–2 minutes.
Prep tip: Roast a double pan on prep day — the sausages and peppers make quick lunches over cabbage noodles or in lettuce cups.
Refrigerate up to 4 days. Reheat on a sheet pan at 400°F (200°C) for 8–10 minutes.
