Instructions

  1. Bring a medium pot of salted water to a boil and set up a bowl of ice water. Lower in the eggs and cook 9 minutes for firm whites with slightly jammy yolks (11 minutes for fully set), then move them to the ice water.

  2. Add the green beans to the same boiling water and cook 3–4 minutes until bright green and crisp-tender. Scoop them into the ice water to stop the cooking, then drain and pat dry.

  3. Make the vinaigrette: let the shallot sit in the vinegar with a pinch of salt for 5 minutes to mellow, then whisk in the mustard, olive oil, parsley and pepper.

  4. Peel and halve the eggs. Toss the lettuce leaves with 2 tablespoons of the vinaigrette and arrange them on a large platter.

  5. Arrange the green beans, tomatoes, radishes, olives and eggs in groups over the lettuce and set the tuna in the center in large flakes.

  6. Spoon the remaining vinaigrette over everything, scatter with the capers and anchovies (if using) and season with the rest of the salt.

Tips for success

  • With no potatoes, the eggs, beans and olive-oil tuna carry the heft. For a warm, potato-like element, add a handful of garlic butter roasted radishes.
  • Oil-packed tuna is richer and more tender than water-packed and is the traditional choice; a spoonful of its oil makes the dressing even better.
  • For a dinner-party version, swap the canned tuna for flakes of garlic butter salmon.

Nice to have, not needed

  • Oil-packed tuna is richer and more tender — water-packed works with an extra drizzle of olive oil.
