Spiced Chai Latte
Black tea simmered with fresh ginger, cinnamon, cardamom, cloves and black pepper, then blended with creamy almond milk. It is fragrant and warming, sweetened with allulose instead of sugary chai concentrate.

Ingredients
Dirty chai (with espresso): A shot of espresso in each mug adds a roasty depth and an extra caffeine kick to the spiced tea.
- Pour 2 oz (60 ml) espresso into each mug and pour the hot chai over it. It is also excellent iced.
Dairy-free & nut-free: Coconut milk replaces the almond milk and cream, and it carries the warm spices beautifully.
- Heat gently and whisk well, since canned coconut milk can separate if it boils.

Instructions
-
If you are using whole spices, crush the cardamom pods and cinnamon stick lightly with the flat of a knife to release their oils.
-
Bring 1¼ cups (300 ml) water to a boil in a small saucepan with the ginger, cinnamon, cardamom, cloves and pepper. Lower the heat and simmer 5 minutes, until fragrant and lightly colored.
-
Turn off the heat, add the tea bags and steep 4–5 minutes, then remove them. Steeping longer makes the tea bitter.
-
Add the almond milk, cream and allulose and heat over medium-low until steaming, 2–3 minutes. Stir in the vanilla.
-
Pour through a fine sieve into mugs. For a frothy top, whip with a handheld frother first, then dust with cinnamon.
Tips for success
-
Strong Assam or English breakfast tea stands up best to the milk and spices. Decaf black tea works for an evening cup.
-
Make a concentrate: quadruple the spiced tea (steps 1–3), strain and refrigerate up to a week. Mix it half and half with hot or cold almond milk, and sweeten to taste.
-
For a caffeine-free spiced mug, try a golden milk latte.
Nice to have, not needed
- Whole spices (cinnamon stick, cardamom pods, cloves) give a clearer, brighter chai — ground spices work; strain through a coffee filter for a clear cup.
Storage & meal prepMeal-prep friendly
